Geezer loves a thick and chunky beef stew. But I could never make beef stew quite like mom’s.
She just had the perfect touch when it came to making beef stew but her’s was very thin and so full of good veggies.
She was also so much like me about delivering food. And seemed like she was always walking in the door with a big pot of beef stew and a couple sleeves of crackers.
Mom’s stew was kind of thin with a strong potato flavor but OH my GOODNESS it was so good.
And now that I’m thinking of it – I may just try to make mom’s beef stew later this week.
If I do I’ll take photos and post the recipe for you if it turns out pretty good.
But here’s our old stand by –
Thick ‘n’ Chunky Beef Stew
Chuck Roast – cubed or beef soup cubes
Potatoes – cubed
Carrots – cubed
Sweet Onion – diced
1 can tomatoes
3 cups water – give or take
1 can Mushroom Soup
1/2 to 1 pkt Pioneer Brand Gravy Mix
Salt, Pepper, Cayenne
I chunk up everything to bite size or smaller and put it into crockpot.
Mix up the mushroom soup and gravy mix with about 3 cups water.
Add salt, pepper, cayenne to taste and pour over ingredients in crockpot. (Remember that cayenne gives food a good bite – and we’re so used to using lots of it – if we eat something without cayenne – Geezer says it tastes “flat” 🙂
Cook about 6-7 hours. And I cook mine on high half that time and then turn to low for the last couple hours.
I will often cube the beef when I’m cleaning up from supper the night before we’re going to have this and put cubed beef in a
plastic bag so I can dump it into the crock pot about 4-5am and cook on high about 2-3 hours before adding the veggies.
That will tenderize that beef so it will just melt in your mouth and makes for a DELICIOUSLY tender beef in your stew.
The Mushroom Soup and Gravy Mix may seem like a goofy addition to stew. But don’t knock it until you’ve tried it. This stuff is what they used to call “mouth watering delicious.” And boy does it stick to the ribs.
