Do you have a secret supper recipe? I guess we don’t in the canyon, we just love old fashioned cooking from scratch … whatever it is. But a group of our church ladies had to take a little trip the other day and we took several car loads and I drove a car load of granny’s in my squad car and I was so glad I got the bunch I got because we shared some of the best old fashioned from scratch recipes.
We were deep into talking about our favorite meals when Peggy said “I’ve got a dish I love to make for supper and I hate to tell you because it’s so cheap and simple but it’s one of my favorites and since it’s just me … I don’t put a lot of thought into cooking. And she proceeded to give us the recipe.
I just had to share this recipe this morning. Because we finally tried it last night and the simplicity of it coupled with the absolute deliciousness of it was just unreal.
Geezer came in from his hunt about 7pm last night … and I think we’ve been together so much non stop since I broke my leg … that he really missed me … because he tx’d me 3 times while he was gone that 3 hours. But he came in the door and he said “WOW smells good, what’s for supper?” I said “Well it doesn’t have a name but I’m thinking about calling it Grandma’s Secret Supper because I got it from Peggy on our ride up in Southern Illinois the other day and she was hesitant to give it to us because she said it was almost a ‘poor woman’s simple supper’ … but boy does it smell good and I can’t WAIT to try it.
We had supper and he said “You can call this whatever you want and I’ll take it any time because THIS is DELICIOUS!” He said “Next time … add a few fresh sliced jalapeno’s though, you’ve got me used to that hot bite!”
But I’ve got a really busy day so let’s just cut right to the recipe. And the amount of each that you use, will just have to be judged by how much you want to MAKE. We’re almost all cooks here at love, home and health … so you’ll be able to judge pretty easy.
Red potatoes … sliced
Sweet onion … diced
Eggs
Bacon pieces or Bacon Bits …
salt, pepper, cayenne
I sliced and fried my potatoes just like we were having plain old fried potatoes. I added the diced onion just about 2 minutes before the potatoes were done. When all of that was done I added 3 eggs and just stirred again until the eggs were scrambled into the fried potatoes and onions. Then I added about 3 tbsp. of Hormel Bacon BITS…I said the other day I used McCormick…but it’s Hormel … not McCormick. And I used to buy real bacon until they started pricing it at the price of almost buying a whole hog from somebody’s farm.
This was ABSOLUTELY delicious and I fixed Geezer fried skillet toast with it. Now I’m doing my skillet toast a little different TOO. I had some Kaiser Rolls a while back and only used 2. SO I put the rest in the frig to stay fresh and I’ve been SLICING those Kaiser Rolls into very thin rounds and frying them in real butter. ONE roll will make 4 good slices! YOU JUST CANNOT BELIEVE how good fried skillet toast IS if you use the right kind of bread.
Now we’ve had fried potatoes and scrambled eggs a gazillion times … but it was the idea of cooking this all together at the end and meshing the flavors. You’re just goofy if you don’t try this … because you can’t get a better meal ANYWHERE than this was. I guess maybe I should have fixed Geezer some flour and red eye gravy with this …That would have been SO MUCH MORE over the top … I would have probably got a HUG. Shoot … didn’t think of it…
Well … that’s it from the canyon today. LOTS of SUPER things coming next week. I’ve been studying and researching and I AM SET ON READY !!!
