One of the Best Bean Soup Recipes EVER! A BIG favorite in the Canyon!
White Bean Soup was something I mentioned in my Fall Festival post … my own special recipe – so I thought I’d better post the recipe because I knew many would be emailing to ask for it and today is going to be a super busy day that ends with tons of company for supper – we’re hoping for all of our kids, the grandkids and now two great grands… Geezer and me are super excited!
THIS IS the recipe for the best white beans you’ll ever eat and I’m telling you if you’d put this recipe up against Martha Stewart’s or Paula Dean’s white beans … THIS recipe would still win … hands down. SO here we go …
White Bean Soup Recipe
- Great Northern White Beans … I usually buy generic
- 2-3 small red potatoes
- sweet onion
- Jalapeno Peppers … generic in jar
- bacon bits…and I like to use real bacon when I have it … but often use McCormick’s Real Bacon Bits
- Bacon grease … which I keep in a jar … I always save my bacon grease drippings to use in other things
- Wright’s Liquid Hickory Smoke
- Salt, pepper, cayenne
- I simply wash my beans and put them in a big pot. You will use the above ingredients depending on how big your pot of beans IS.
- I cut up 1/4 to 1/2 sweet onion … diced
- I dice about 1/3 cup Jalapeno pepper slices out of the jar
- I peel and wedge 2-3 red potatoes and drop them in …
- about 2-3 tbsp. bacon bits … real or McCormick’s
- I add about 2-3-4 drops of Wright’s Liquid Hickory Smoke
- Salt, pepper, cayenne to taste.
NOW … the trick here is to get the amount of each ingredient right … according to your taste and the amount of
beans you’re cooking. I only cut my potatoes in wedges…maybe each cut into about 4 piece because I want to be able to find them when they’re cooked VERY SOFT and dip them out and mash them and put them back into my beans. It just adds a little more flavor and substance to the bean soup … and actually is a little step that makes a HUGE difference. I just made that part of the recipe UP years ago … by trial and error. And I’ve used it ever since.
I take out about 1 cup of the beans … or more, give or take … depending on how much you’re cooking … and mash them also and put them back into the mixture. This again … just adds tremendously to your white bean flavor.
Towards the end … maybe 30 minutes before the beans are done … I add about 3 tbsp. of real bacon grease. I always save my bacon great in a little fruit jar to keep to add to this and that … because bacon great just adds SO MUCH flavor to a dish.
OK I think that’s IT … These are the most delicious beans you will ever eat. And the secret IS the added ingredients. The potatoes add BIG to the flavor … but they do NOT give a potato flavor at all. The Hickory is priceless and I use it in many recipes … meatloaf … chili … sloppy joes and other things…plain hamburgers cooked in the canyon … have a couple drops of hickory flavoring added to the beef drippings as the hamburgers cook.
